Though baking is an art that requires a lot of precision, we often see professional bakers use heavy terms or jargon that is just too complex to understand. Words like crumb, batard, folding, boule are often used by professional bakers.

  • Folding means simply taking the dough and rotating it 90 degrees and folding it up again, picking it up and dusting the loose flour off of it, and then returning the dough to the bowl and covering it again.
  • Batard, on the other hand, means a loaf that has an oval or oblong shape.
  • Crumb is a term used for the pattern of holes inside of a loaf. Boule is a round loaf.
  • Other jargon includes terms like AP, which means all-purpose flour, whereas sift is to ensure there are no lumps left in your flour.
