How to make Turkish Red Lentil Soup at home and beat the winters?

Ingredients for preparing Turkish Red Lentil Soup

  • 1 cup red lentils
  • 2 tbsp olive oil
  • 1 large onion, finely diced
  • 1 large carrot finely chopped
  • 1 tbsp tomato paste
  • 2 tsp cumin
  • 1 tsp paprika
  • ½ tsp dried mint
  • ½ tsp oregano
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes
  • 8 cups of water
  • 4 tsp vegetable soup powder or you can replace 4 cups of water with 4 cups of prepared vegetable soup
  • ½ tsp sea salt (as per taste)

For preparing Paprika Oil

  • 3 tbsp of olive oil
  • 1 ½ tsp paprika
  • ¼ tsp red pepper flakes

Method to cook the Turkish Red Lentil Soup

  • Take lentils and rinse them 2 or 3 times, drain them and set aside
  • Preheat a large pot on medium heat, pour a little olive oil and sauté the onions for 3 mins with a pinch of salt in it. Then add the carrots and sauté them too.
  • Add the tomato and mix it well, then add the cumin, paprika, dry mint, black pepper, red pepper flakes and sauté them properly to get the flavours of the spices to bloom.
  • Add the lentils with water and vegetable soup prepared, and boil it well and then cover the pot halfway and let it cook for 15-20 mins.
  • Once the lentils are completely cooked, on a side place a small saucepan and make the paprika oil by swirling together olive oil, paprika, and red pepper and cook on a medium flame. After the paprika bubbles up, remove the pan from the heat.
  • After the soup is prepared and the lentils are tender, blend the soup using a blender to reach the consistency you desire.
  • Serve the Lentil soup with a sprinkle of paprika oil, lemon and extra mint with red pepper to spice the soup and beat the winters.
