Ginger and Garlic Vegetable Soup

Sauté chopped garlic and grated ginger in a little oil, add diced carrots, beans, cabbage and peas, then pour in vegetable stock. Season with black pepper and a pinch of salt, and simmer until the vegetables are tender.

Tomato and Basil Soup

Rich in antioxidants and vitamin C, tomatoes make for a comforting bowl of soup. Cook ripe tomatoes with onions and garlic until soft, blend into a smooth puree and simmer with vegetable stock. Add fresh basil leaves and finish with a dash of black pepper for extra flavour.

Lentils are packed with protein, while turmeric is widely valued for its anti-inflammatory properties. Cook yellow moong dal with onions, tomatoes, turmeric and cumin until soft.
