Rainy Days Call For Crispy Onion Bhaji Dipped In Mint Chutney


What is an Onion Bhaji? It is a popular Indian street food made by deep-frying diced onions mixed with spices. Check out the crispy onion bhaji recipe by BBC Maestro.

Step 1: Add sliced onions, turmeric, chilli powder, green chilli, cumin and coriander powder into a mixing bowl. Add chopped coriander stalks, and salt, and mix well. Set aside for 7-8 minutes.

Step 2: Add the bicarbonate of soda, cornflour and gram flour, and use your hands to mix together. The aim is to achieve a thick mass of onions, held together by the flour.

Step 3: Pre-heat your oil in a deep-frying pan or wok to 180°C (350°F).

Step 4: When the oil is hot, pick up a cluster of the onion mixture with your hands and delicately drop them into the oil. Just add enough to loosely cover the surface of the oil.

Step 5: Use your spider/skimmer to push bhajis below the surface of the oil on both sides.

Step 6: Once golden, remove and place them on kitchen roll or another absorbent paper to remove excess oil. Serve with mint chutney.
