* 2 cups thick poha (flattened rice)* 1 medium onion, finely chopped* 2 tablespoons peanuts* 1 green chilli, chopped* 1 teaspoon mustard seeds* 8–10 curry leaves* ½ teaspoon turmeric powder

Simple Poha Recipe:
Place the poha in a colander and rinse it gently under running water. Let it sit for a few minutes until soft. Avoid soaking it for too long, as it can become mushy.

Heat oil in a pan and add mustard seeds. Once they begin to splutter, add curry leaves, green chilli, and peanuts. Sauté until the peanuts turn golden and crunchy.

Add the chopped onions and cook until they become soft and translucent. Stir in turmeric powder and mix well.

Add the softened poha and salt. Gently toss everything together so that the turmeric coats the poha evenly. 6. Cook for two to three minutes on low heat while stirring occasionally.

7. Turn off the flame and squeeze fresh lemon juice over the poha.

Garnish with chopped coriander leaves and serve hot.
