Diwali calls for a feast of different specialities. These feasts are primarily ruled by sweet dishes, which are mostly prepared at homes, and have become a part of the memories. Lauki ka halwa one such delicious Indian sweet made from bottle gourd. This sweet is prepared with gourd, milk and ghee which many Indians love dearly. This Indian sweet dish is coated with creamy grainy khoya milk in every bite of doodhi halwa is unmatchable. This sweet dish is also called as dudhi ka halwa in many regions of India. As Diwali approaches, one can prefer making this sweet dish at home and serve it at a family gathering and friends. Here is the recipe of lauki ka halwa that can be made easily. 

Ingredients to make dudhi halwa:

  • Two cups of grated bottle gourd (lauki)
  • One cup of full-fat milk
  • Four tablespoons of Ghee
  • Two or three green cardamoms
  • Six tablespoons of sugar
  • Two tablespoons of almonds roughly chopped
  • Three tablespoons of roughly chopped cashew nuts
  • 100 grams of khoya (mawa) mashed
  • 3/4 teaspoon cardamom powder

Procedure:

First, melt ghee in a pan for a few minutes. While the ghee is heating, add green cardamom and fry it for a few seconds in the pan. Later, add the grated gourd and sauté on high heat for three to four minutes until it softens. As the bottle gourd is sautéed well, add milk and stir continuously for one to two minutes. As the milk dries, add sugar and mix well. Stir the mixture until sugar melts. Now add those almonds and cashew nuts hich were kept away and cook for exactly a minute. Now, add cardamom powder and khoya. Stir the mixture continuously for one and a half minute to finish the recipe of halwa. The dish is now ready to be served.
