To prepare the dough, combine all-purpose flour, salt, and a dash of oil in a bowl. Gradually, add water and knead the mixture into a smooth, semi-soft dough. Cover it with a lid or cloth and let it rest for 15 minutes, allowing the gluten to relax and making the dough easier to roll out for parathas. This resting period ensures a tender texture in the final dish.

To assemble the paratha, divide the raw papaya stuffing and dough into 4 equal portions. Roll each dough portion into a 5-inch diameter circle using whole wheat flour for dusting. Place a portion of the raw papaya stuffing in the center of each dough circle.

Fold the dough over the filling, sealing the edges tightly. Roll out the stuffed dough gently into a larger circle, taking care not to tear the dough. Place a portion of stuffing in the centre of the circle. Bring together all the sides in the centre and seal tightly.  Roll again into a circle of a whole wheat flour for rolling.

Gently roll out the paratha to an even thickness. Cook on a preheated tava with a drizzle of ghee or oil. Flip and cook until golden brown spots appear on both sides. Serve it.

The raw papaya paratha boasts a subtle yet distinctive flavour profile, complemented by a satisfying mouthfeel. The stuffing's flavor is expertly enhanced by a blend of everyday spices that harmonize beautifully with the raw papaya's natural taste. The addition of fresh coriander adds an aromatic depth, elevating the overall flavor experience.
