Christmas is just around the corner. There are a few cakes that are easy to make and will add variety to your table. Here are three easy cakes that you can make on short notice.

Three easy cakes for this Christmas:

1. Bûche de Noël

  • 6 separated eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • Powdered sugar (for sprinkling)

The first step is to preheat the oven. Keep a baking pan ready by spreading butter paper on it and greasing it with some butter. In a bowl, mix flour, cocoa powder, and salt. Take another bowl and separate the yolks and beat them together. Now add half a cup of sugar into the yolks and add the flour mix into it and beat until pale yellow. In another bowl, add the egg whites with half the cup of sugar and beat it well. Take half of the egg white batter and add it to the baking pan. Bake the cake for twelve minutes and this will cook the whites. Sprinkle some powdered sugar on a clean towel and invert the cake tray into it. Roll the towel with the cake into a log and let it cool. The next step is to make the filling. In a bowl, add powdered sugar, a few drops of vanilla extract, heavy cream, and a pinch of salt and beat it well. Refrigerate the filling. When the cake is cool, spread the filling evenly across the cake. Now roll the cake back into a log, without the cloth, and refrigerate for an hour. Make the regular cake frosting and coat the chilled cake with it. Now decorate the cake with powdered sugar and chocolate curls. Your dish is ready to be served.

2. Special Vanilla Bundt Cake

  • 1 1/2 cup butter (softened)
  • 2 cups granulated sugar
  • 4 eggs
  • 1 tbsp vanilla extract
  • 1/2 tsp almond extract
  • 3 cup all-purpose flour
  • 6 tbsp cornstarch
  • 2 tsp baking powder
  • 1 1/2 tbsp salt
  • 1 cup whole milk

You need to preheat the oven first. Take a bundt pan and spray some cooking spray on it. In a large bowl, start beating butter and sugar and start adding eggs one by one into the bowl while you keep mixing it. Add some vanilla and almond extract to the mix created. In another bowl, whisk flour, corn starch, baking powder, and some salt. Now mix the batter earlier made and the powders together. Now add some milk and stir well until the consistency is right. Pour the batter into the bundt pan that was kept ready and spread evenly. Bake the cake for 55 minutes and keep it aside to cool. Now, in a bowl, mix powdered sugar, milk, vanilla, and salt. Pour this cream over the baked cake and it is ready to serve.

3. Caramel Pound Cake

  • 1 cup butter (softened)
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/4 cup caramel sauce (more for topping)

Preheat the oven first. Now keep a loaf pan well-greased with cooking spray. In a large bowl, mix butter and sugar together. Keep adding eggs one by one to the batter made. In a medium bowl, mix together, flour, baking powder, and salt. Mix the two batters made and mix well together. Take one-fourth of this batter and mix with caramel sauce. Now add the batter into the loaf pan and add the leftover caramel-less batter on top of it. Bake it till it turns light brown. Pour some caramel on top of the cake and sprinkle powdered sugar.
