Moussaka

The preparation of the moussaka for an instant crowd is a pleaser dish. This classic Greek dish of layered thinly sliced potato, aubergine, and lamb is topped with a creamy béchamel sauce. Moussaka is an eggplant- or potato-based dish, often including ground meat, which is common in the Balkans and the Middle East, with many local and regional variations. The modern Greek variant was created in the 1920s by Nikolaos Tselementes.

Souvlaki

Souvlaki is a popular fast food choice in Greece. Skewers of marinated meat are cooked over an open fire-it can be lamb, pork, and chicken. The accompaniments are usually tomatoes, red onion, and tzatziki wrapped in soft pitta bread. In some tavernas, they serve chips stuffed inside the pitta too. The meat usually used in Greece and Cyprus is pork, although chicken, beef, and lamb are used in Turkish kitchens.

Dolmades

Dolmades (Dolmathes) refers to Greek dishes made with either cabbage or vine/ grape leaves, stuffed with a delicious herby rice mix shaped into little rolls and boiled until tender. Some dolmades recipes,  besides rice, herbs, and seasonings, also include minced meat (beef and/or pork).

Spanakopita

The key filling ingredients in a classic spanakopita recipe are spinach and feta cheese.  You can only use quality feta cheese, no other cheese qualifies for spanakopita. To the spinach and feta, add flavors in the form of fresh herbs and aromatics. Spanakopita, a Greek savory spinach pie of ten contains cheese, typically feta. It may then be called spanakotiropita, especially in northern Greece. In southern Greece, the term spanakopita is also common for the versions with cheese.

Kleftiko

Kleftiko (or kleftiko), is a celebratory Greek dish of slow-roasted lamb with potatoes and vegetables which are cooked together on parchment paper until meltingly tender. Lamb kleftiko means lamb “stolen.”  the name is said to originate from the Klephts who would steal lamb or goats and cook the meat in hidden underground ovens, n order to seal the flavors and smells, as well as to avoid being caught.

Horiatiki

The meaning of Horiatiki is Village salad, but interestingly,  Greek villages are not its birthplace. There is a national salad  which was 
invented by the restaurant owners in  Athens who wanted to charge the customers more during the rise of tourism in Greece.
