What is filter coffee?

Filter coffee, often referred to as kaapi, is a beloved South Indian delicacy that transcends the boundaries of a mere beverage. With its distinctive preparation and rich flavour, filter coffee is an integral part of South Indian culture, offering a sensory experience that goes beyond a simple caffeine fix. Brewing process

At the heart of filter coffee is the unique brewing process. Traditionally, a stainless steel or brass filter, known as a "dabara," is used. It consists of two cylindrical cups – the upper cup with small perforations and the lower cup to collect the decoction. Coarsely ground dark roasted coffee beans, often a blend of Arabica and Robusta varieties, are placed in the upper cup. Hot water is then poured over the coffee grounds, allowing the decoction to slowly drip into the lower cup.

Blending with chicory

What sets South Indian filter coffee apart is the addition of chicory, derived from the root of the chicory plant. It is roasted and ground before being mixed with coffee. This not only adds a unique bitter flavour but also imparts a delightful caramel hue to the brew. The ratio of coffee to chicory varies, with the latter mostly comprising 10-12%.
