The cuisine of Bihar is similar to North Indian cuisine but has influences of East India cuisines. It is highly seasonal and involves beverages like sharbat and dry sesame seed preparations that are consumed in winters. The most popular Bihari cuisine is Litti Chokha. This cuisine has many scrumptious and exotic dishes that are a must-try for every food connoisseur. Here is a list of must-try savoury dishes of Bihari cuisine.

Litti Chokha

This is one of the most popular dishes in Bihari cuisine. It is made of wheat and sattu with the added flavour of spices, kneaded into round spicy balls. They are dipped in ghee before serving. The texture of Litti along with the crunchy crust makes it a fulfilling meal. Chokha is prepared by mashed vegetables that include potatoes, brinjal, tomatoes, adding spices and chopped onion, garlic, etc and served with Litti. Bihari food includes Sattu or gram flour, it is mixed with spices and filled in wheat dough balls, rolled and cooked with ghee to form sattu parantha that is also called makuni.

Mutton Kebabs and Reshami Kebabs

Bihari cuisine is also famous for its lip-smacking non-veg delicacies. The famous mutton kebabs of Patna are one of the royal delicacies with a historical origin. When exploring Bihari cuisine, don’t forget to visit Mahgu in Kadamkua. Maghu’s mutton kebabs is a delightful treat for your taste buds. Also, Rajendra Nagar in Patna has a shop named Richie Rich, famous for its Reshmi Kebabs. These kebabs give a tough competition to Lucknow’s Galauti Kebabs.

Dal Peetha

Dal Peetha is the Bihari version of dumplings or momos. This is made with rice flour and stuffed with lentil paste, with added flavours of spices and pickles. The dumpling is then steamed or fried. It is usually eaten at breakfast. Another version of this dish is the stuffing of lentil paste is mixed with spices and rolled into chappatis and is called Dal Puri.

Kadhi Badi

This is one of the staple delicacies of Bihari cuisine. It is made from gram flour and has two elements. The gravy known as Kadhi is a yellow liquid made from gram flour mixed with buttermilk with an addition of spices. Badi is made from the paste of gram flour and spices, deep-fried in oil. It is usually served with rice or puris.

Puri Sabzi

It is a lip-smacking platter of bread served with aloo ki sabzi and pickle. Poori is basically deep-fried bread made from wheat flour. The aloo ki sabzi is made of potatoes fried along with spices and herbs. In Bihar, it is served with the dessert of jalebi that makes it a balanced platter.
