Dal is the Hindi term used for the stew dish prepared by split pulses. These pulses include lentils, peas and beans and the stew prepared is called dal which forms an important part of the staple Indian cuisine. Various types of pulses are used to make dal and here we are sharing the ways to make a plain dal into a tasty version that you can eat with just roti or dal without any side dishes.
Dal stew is prepared using a pressure cooker. For the first version of dal stew, measure the amount of dal you will need to prepare and mix it with water, salt and a pinch of turmeric powder. For one cup of dal, use two and a half cups of water and close the lid of the pressure cooker and let it cook till you get three whistles when cooked at medium heat. Once the dal is done, then you can add more water later depending on how thick you want your dal to be. In a pan, temper some cumin seeds, a pinch of asafoetida, sliced green chillies or dry red chillies, curry leaves, and mustard seeds. Add the tempering into your dal and mix it well. Just before serving mix a spoon of ghee into your dal and give it a final whirl before serving.
Prepare the dal in the same way above but instead of your usual toor dal (also called as arhar dal), add unroasted mung dal in equal portions to prepare your dal stew. Once the stew is done, keep it aside and get ready for the tadka. In a pan, temper cumin seeds, a pinch of asafoetida, sliced green chillies or dry red chillies, curry leaves, mustard seeds along with sliced garlic, sliced onion, and sliced tomato. Once done, add the tempering into your dal and mix it before serving.
For the dal khichdi, measure equal portions of rice and dal and put both of them in one bowl. This preparation is sufficient for a serving of two. First start with a big spoon of ghee in a pressure cooker, temper some cumin seeds, green chillies, ginger, onion and then add 5 bowls of water along with salt and turmeric powder. Let the dal cook until you get three whistles in medium heat. For another variation, you can even add potato, tomato, beans before closing the lid to add the extra veggies in your diet.
