Carrot pickle is a luscious, crunchy, and spicy pickle which is prepared from the carrots with all the flavour and the savoury Indian spices. The freshness and the exquisite mixture packs the meal intact. The instant carrot pickle recipe is a mere way of making this pickle with very few ingredients. Carrot has an excellent amount of vitamins and fibre which helps to increases your metabolism, make your vision grow stronger, keep you away from any skin disorders, and also lower cholesterol. Ingredients:

  • 5-6 thin sliced carrots
  • 1 tablespoon of salt
  • 1 tablespoon of mustard seeds powder
  • 1 tablespoon of mustard seeds
  • 1 tablespoon of chilli powder
  • ¼ tablespoon of turmeric powder
  • ¾ spoon of Hing
  • 1 tablespoon of lemon juice
  • 1 tablespoon of mustard oil
  • ½ tablespoon of fennel seeds

Method:

  • Heat the oil in a pan
  • Add the hing and mustard seeds and let it splutter
  • Add ¼ turmeric powder and 1 tablespoon of chilli powder
  • Add ½ tablespoon of fennel seeds, 1 tablespoon of salt and sauté it.
  • Add chopped carrots into the mixture and mix it well.
  • Let it cool down at room temperature and then add lemon juice to it.

There you go your tangy and spicy instant carrot pickle is ready to serve. Enjoy it with dal, rice, or chapatti.
