Fluffy Cheese Soufflé:

Recipe:

  1. Grease the soufflé dish with soft melted butter and add two tbsp of breadcrumbs to your utensil. Coat it nicely over the melted butter and leave it aside.
  2. In a saucepan on medium heat, add four tbsp of butter and three tbsp of flour. Whisk both the ingredients well until it forms a creamy consistency. Cook for two minutes. Now slowly add two cups of whole milk and whisk. After that, add a cup of grated cheddar cheese, half tsp of salt, and a pinch of nutmeg. Stir continuously and make sure your soufflé sauce cools down a little bit.
  3. Once that happens, add four egg yolks and blend well until you get a good consistency. Put off the flame, transfer the sauce into a large glass bowl and set that aside. Whisk the leftover-egg whites with the help of an electric whisker. Add a quarter tsp of cream of tartar into it and whisk until you achieve nice stiff peaks.
  4. Transfer the whisked eggs into the soufflé sauce and combine both nicely. Finally, pour the soufflé batter into the coated soufflé dishes and put inside the oven at 350-degree Celcius for 35 minutes. Your delicious fluffy cheese soufflé is ready to be served.

Gruyere Spinach Cheese Souffle

Recipe:

  1. Preheat the oven at 200°C. Put a saucepan on low heat and add two large tbsp of soft melted salted butter. Add a few minced garlic cloves and cook for three minutes. Once done, add two tbsp of all-purpose flour, mix well and add around 1 ½  cup of milk. Stir the mixture nicely, make sure it's free from any lumps.
  2. Add the entire bunch of spinach to this white sauce mix and cook well, continually stirring for 5 minutes until it wilts. Add some seasoning and put off the flame. Transfer the mixture into a big glass bowl. Keep the bowl aside to cool off.
  3. Prepare two ramekins by greasing them with salted butter. Also, coat the ramekins thoroughly with breadcrumbs. Add a half cup of grated gruyere cheese to the spinach mixture and blend the ingredients well. In a different bowl, break an egg and separate the egg white from the yolk. Add the egg yolk into the spinach-gruyere mixture and mix well.
  4. Now, whisk the egg white in a different bowl until it turns white and forms a stiff peak. Add half a portion of the foamy egg white into the spinach bowl, use the fold-in technique to mix it. Continue doing this until the egg white mixture is all used up.
  5. The gruyere and spinach mixture is now ready and should be transferred into the two ramekins. Place the ramekins inside the preheated oven for 15-20 minutes until the mixture rises properly and sports a beautiful golden brown colour on top.
